Vietnamese Paleo Garlic & 'Soy' Chicken (Soy Free) Ga Roti

Ga Roti is one of my favourite dishes that mum would cook when we were little. Only 5 ingredients, the chicken is reduced with coconut water, garlic & soy. I replaced the soy sauce with coconut aminos which works perfectly well. Its quick to put together making it perfect for a weeknight meal when time is restricted. I usually keep a store of frozen drumsticks or thigh fillets in the freezer, all the remaining ingredients are staples in our house which makes this an easy emergency meal.

Nut Free Sweet & Salty Coco Cacao Bites

I made these yummy nut free bites with just five ingredients for my 5yo to take to school as he started Kindy this year. He has a nut allergy and with most schools nut free, it's a great little treat to pack for school even if your child has no nut allergies.

It is refined sugar free and sweetened only with Medjool dates. The cacao nibs add a nice cholatey crunch which isn't bitter at all with the sweetness of the dates and the hint of salt just brings out all the flavours. The best part is it takes less than 10 mins to make a couple of weeks worth of lunch box treats (if you can refrain from eating them yourself!)

Paleo Crispy Chicken Tenders

This is a favourite of the kids and also mine, a very quick and simple but delicious meal served with whatever salads or veggies we have on hand and a small portion of fermented veggies. I use chicken tenderloins as they are the perfect size and are super moist. You can also just use chicken breast, sliced & lightly tenderised.

I can get this meal ready and plated within 30 minutes which is a great option for weeknights when the kids come home hungry from school.
