Nut Free Sweet & Salty Coco Cacao Bites

I made these yummy nut free bites with just five ingredients for my 5yo to take to school as he started Kindy this year. He has a nut allergy and with most schools nut free, it's a great little treat to pack for school even if your child has no nut allergies.

It is refined sugar free and sweetened only with Medjool dates. The cacao nibs add a nice cholatey crunch which isn't bitter at all with the sweetness of the dates and the hint of salt just brings out all the flavours. The best part is it takes less than 10 mins to make a couple of weeks worth of lunch box treats (if you can refrain from eating them yourself!)

Nut Free Sweet & Salty Coco Cacao Bites


Prep Time: 10 mins
Chilling Time: 30 mins

pressing the mixture into a dish and cutting into bite size saves time, otherwise you can roll them up into a ball (see here)

You will need:


  • 2 Cups desiccated coconut (preservative free, check the label) (buy on iherb or amazon)
  • 10 Medjool dates pitted (buy on iherb or amazon)
  • 3-4 tbsp Coconut Oil melted (buy on iherb or amazon)
  • 1/2-1 tsp salt (buy on iherb or amazon)
  • 1 tbsp Cacao nibs (buy on iherb or amazon)
  • slice tin, or rectangular dish lined with baking paper (depending on the size of the dish, you can make thin or thick bites 40 or 60 pieces)

Method:
  • Place desiccated coconut, Medjool dates, 2 tbsp melted coconut oil and 1/2 tsp salt in food processor and mix until combined
  • Take out 1 tsp of the mixture and form a ball, if the mixture is too dry, add more coconut oil and recheck. The mixture should form a ball when pressed together
  • Taste the mixture for the right balance of sweet & salty, add the remaining salt if required
  • Place half the mixture into a silicone slice mould (or line a slice tin with baking paper)

  • Press down firmly and use the back of a spoon to even the layer out
  • Scatter the Cacao nibs over the top

  • Using a spoon, evenly sprinkle the remaining mixture on top
  • Press down firmly and use the back of a spoon to even the top layer out
  • Place in the fridge for approx 30mins until firm, you should be able to lift the entire slice out easily
  • Cut into even bite sized squares

  • Store in the fridge for approx 2 weeks

  1. These look and sound delicious! I'm always keen to try new nut free goodies for preschool. I'm low on a lot of ingredients at the moment but will give them a crack next week once I have had a chance to stock up again! Thanks for the recipe :)
