Salad for One with Pear

I love adding a little fruit to salad sometimes for some added sweetness and tang. Pears are in season in Australia at the moment so it's a great time to start add them to a few dishes. This salad is simple and really can be thrown together with what ever greens and nuts you have on hand.

You will need:
  • 5 baby cos lettuce leaves
  • Some pear thinly sliced (I use a mandolin)
  • 1 radish thinkly sliced
  • 1/4 lebanese cucumber thinly sliced
  • half a carrot (colour of choice) thinly sliced (I used a peeler)
  • 1 tbsp pine nuts
  • 1 tbsp almonds
  • 1 tbsp crumbled feta (or leave out to keep it vegan friendly)
  • Extra Virgin Olive Oil & Balsamic Vinegar
Method:
  • Layer the lettuce, radish, lebanese cucumber and carrots
  • Place the thinly sliced pear on top
  • Sprinkle with almonds, pine nuts and feta
  • Drizzle with Olive oil and some Balsamic Vinegar

This is lovely served as an entree. Hope you enjoy!
