Simple Crispy Roasted Chicken Pieces

I love roasting chicken pieces rather than the whole chicken, the cooking time is much shorter and when you have three hungry boys to feed, it's great to be able to have dinner ready in about 30mins. Drumsticks and wings are our kids favourite pieces and we usually serve this meal up with steamed broccoli, roasted cauliflower, fermented carrot sticks and a green salad.

If you have the time to plan ahead, seasoning the chicken 2 hours ahead or overnight will result in some seriously yummy chicken, but it still tastes pretty good if you just throw it in the oven after seasoning.

Serves 4

You will need:
  • 8 chicken pieces (wings, drumsticks or use a whole chicken cut into 8 pieces and save the carcass, head and feet for bone broth)
  • 2 tsp garlic powder (buy from iherb or amazon)
  • 2 tsp onion powder (buy from iherb or amazon)
  • 2 tsp paprika (buy from iherb or amazon)
  • 1 tsp natural sea salt (buy on iherb or amazon)
  • 1 tsp pepper (buy on iherb or amazon)
  • 2 tbsp softened butter (or ghee) (buy on iherb or amazon
Method:
  • Place the chicken pieces in a large bowl
  • Add the garlic powder, onion powder, paprika, salt & pepper and mix well
  • Cover and place in the fridge for at least 2 hours or overnight if you have time (if not just preheat your oven as below)
  • When you are ready to cook the chicken, remove from the fridge for at least 1 hour so the chicken warms up to room temperature
  • Take out the butter to soften at room temperature
  • Preheat the oven to 200 degrees celsius
  • Line a baking tray with baking paper and place the chicken in one layer
  • Place in the hot oven for 20mins or until golden, then turn over and bake for another 10-15mins until golden and crispy
  • While the chicken is cooking in the oven, you can prepare your steamed veggies and salad
  • The chicken tastes pretty good cold the next day too :)
