Raspberry Kombucha Tea Recipe

My kids have been drinking kombucha tea for about 3 years now and my now 7yo still loves his simple raspberry Kombucha tea best. I realised I hadn't posted this recipe up yet but should as it is a quick one to make if you are busy or new to brewing your own Kombucha at home, it's nice to have some simple second fermentation ideas.

Fluffy 3 Egg Omelette by Jean Imbert

I discovered Jean Imbert's 3 egg fluffy omelette on a friends Instagram page and had to give it a go, it looked so interesting with the light fluffy egg oozing out of the folded omelette. You basically need to whisk the eggs until you have a nice mousse texture and double cook it in the pan first with oil, then when you can lift the sides, tuck some butter in to make it crispy on the outside and light and moussey on the inside. Wow!

Fluffy 2 Ingredient Banana Pancakes

I'm so grateful to whoever invented the 2 ingredient pancake, a banana and an egg with no sugar or dairy needed. Genius! These two items are staples in our house so we always have them on hand, so when I discovered Jean Imbert's fluffy omelette recipe on Jamie Oliver's YouTube (watch it here) I immediately thought to try making a fluffy 2 ingredient banana pancake. Here was the result:

Nori Wrap and Roll Platter

My favourite meals are ones that are interactive and social, usually involving our hands and lots of dishes or toppings to choose from, like my mini burger platter. The kids love eating this way, and it's just how I grew up with our lettuce wraps and rice paper roll dinners, we all learnt to wrap and roll as we ate and socialised. I find my kids end up eating a lot more veggies as they have so much fun wrapping their own nori rolls. It also doesn't leave you feeling overly stuffed even though you can keep nibbling on it for a couple of hours between chatting and drinking so it's great entertainer or party dish.

One Ingredient Facial Brightening Mask

Since going mosty paleo and being much more aware of what food I was putting into my body, I realised I should also look at what I am putting on my skin. The skin is the largest organ in the human body and it absorbs what you put on it, so it makes sense that you should try and only put stuff on your skin that you could eat or at least consume safely. This is something that took me a little longer to commit to as it was too convenient to reach out for my favourite tube of cream or mask.

Angel Hair Zoodles with Truffle Oil - Only 3 ingredients

I went to a lovely pot luck lunch over the weekend and got to taste an incredibly delicious pasta dish (yes I ate some pasta!) made by my friend Audrey. I couldn't get over how deliciously simple it was to make, with only 3 ingredients needed I popped by the store and quickly picked up some truffle oil, zucchini & caviar to make a grain free version. Wow, five minutes later, I had my angel hair zoodles with truffle oil plated up and ready to eat.

Simple Garden Salad with Zaatar Spiced Eggs

Lunch at home during the week for me is usually a salad with whatever I have on hand in the fridge and pantry. Sometimes, it turns out really well like this simple garden salad with zaatar spiced eggs. This salad has a handful of fresh ingredients plus a sprinkling of herbs, nuts and seeds. You can easily recreate this salad with whatever you have on hand but I do really recommend the zaatar rolled eggs. I was really lucky to get my hands on this zaatar mix from a friend who brought it all the way from Lebanon, if you aren't lucky enough to find some already made zaatar, you can use your favourite herb and spice blend or you can make your own zaatar mix (see below).

I am excited to share my new lemongrass, ginger & turmeric kombucha tea recipe on my friend Monique's blog Nourish Everyday. I met Monique when I first started out on instagram and have been following her beautifully styled, delicious recipes since.

L'usine Space Cafe & Restaurant Review

It has been almost a year now since we moved to Vietnam with the kids. During this time we have spent a lot of it exploring new cafe's and restaurants to eat. We discovered L'usine during our first month and it quickly became a favourite spot for me to bring my mac and spend all day there. It is easy to fall in love with this place with their industrial style fit out, beautiful warehouse ceilings, large windows and oh my amazing lunch menu. If you follow me on Facebook or instagram you will have seen my posts at L'usine and how much I love this space, I was beyond excited to be invited to try their dinner menu. YES they do dinner!

Frozen Yoghurt Cups

I love making small snacks and treats that are easy for the kids to help make in the kitchen and also get excited to eat. They love the frozen yoghurt bark with fresh fruit and raw honey so I made another variation with the same five ingredients set in mini silicone cups. It's quite funny, all you need to do is change the shape of the treat and to the kids, it becomes something new and exciting again.

Vietnamese Hai Nan Chicken recipe

One of my favourite recipes that mum makes on a regular basis is her version of Hai Nan chicken. A whole poached chicken, with lots of coriander, spring onions and a fresh ginger dipping sauce served with rice cooked in the chickens broth. Each year they grow their own ginger in a pot, harvest time is around July and the last harvest gave them almost 1.5kg of fresh organic home grown ginger (you can learn how to do it here). I'm so glad I'm going to be back home in Australia this July, as the first thing mum will be making is her Hai Nan chicken!

Strawberry Mojito Kombucha Tea

I don't drink alcohol but whenever my husband orders a Mojito, I always have to refrain from taking a sip. It looks so refreshing especially in the Vietnam heat. I went to Hair Bar a few months ago, great concept, they only do blow dry or styling and on Friday nights a cocktail is included (a great start to our ladies night out ;) They made a virgin strawberry mojito for me and I've been addicted to this combo since (yes, a little behind I think!)

A mojito typically consists of five ingredients - rum, lime, sugar, sparkling water and mint. So considering kombucha has a teeny amount of alcohol (as do all fermented foods) I figured it would work pretty well, I was so excited to taste it after the 2nd fermentation was complete. Take a look :)

Paleo Mini Burger Platter

Growing up in a Vietnamese house, mum always served up several dishes with each meal. Each dish would cover one of the five basic tastes.  Sweet, salty, sour, bitter and umami. So naturally I love having a meal when there are a lot of options that cover all these tastes and this Paleo Mini Burgers Platter does just that!

It's simple to get right for everyone's taste as the whole idea is to serve up lots of sides to go with the patties to cater for all palates including toddlers. The options are endless but I have listed 10 sides that are my favourites including a fermented veg to give this meal an extra nutritious gut healing boost. You can also try more variations in the one meal as the patties are mini size so you could easily have 3-4 patties with different toppings.

Pink Guava and Strawberry Smoothie

Guavas have to be my all time favourite fruit. I remember going to the nursery with my dad when I was about 7 years old and buying our first guava tree. It is still thriving in their backyard and produces the most fragrant and delicious fruit. They recently added the pink variety a few years ago. Store bought guavas never matched the taste as our homegrown ones back in Australia, but since I moved to Vietnam we have been so lucky to have these delicious guavas available in abundance.

On our way back from our trip to Ben Tre, I picked up 10 kilos of pink guavas at a road side stall. They were so fresh, fragrant and crunchy. We ate a whole bunch on the bus, shared some and left some on the bench to soften and ripen further. Pink guavas are amazing, the taste and texture changes as it ripens and softens. I love them both in their crunchy and firm state and in their soft and juicy state. The soft and juicy ones are perfect to blend up into a yummy smoothie.
