Coconut and Chia Pancakes 5 Ingredients (Paleo, GAPS, Grain free and Dairy free)

If you have been following my blog for a while, you know how much I love these 2 ingredient sugar banana pancakes (see recipe here) which give the batter a much thicker consistency than the standard bananas, just adding some shredded coconut and chia seeds really changes the texture and flavour. My husband who is the only one that doesn't like the 2 ingredient sugar banana pancakes as much in our house loves this version. It's a quick breakfast recipe and works well in lunch boxes, being nut free they work great as a school option for the kids too so you can pack up any leftovers for snack time.

It's really important to use sugar bananas for this recipe as your standard bananas will not make a thick enough batter. Sugar bananas are shorter with a thin skin and can be found in most Asian grocers.

A little note, chia seeds are not technically GAPS approved. Please leave them out if you are still working on healing your tummy, you can substitute with some slivered almonds for texture.

Prep Time: 5 minutes
Cook Time: 12 minutes
Makes approx 20 pancakes (5 cm / 2 inches)

You will need:
  • 4 sugar bananas peeled (180 gms)
  • 3 eggs
  • 3 tbsp shredded coconut (buy on iherb or amazon)
  • 1 tbsp chia seeds  (buy on iherb or amazon - or slivered almonds if strictly GAPS)
  • 1/2 tsp cinnamon (buy on iherb or amazon)
  • coconut oil for cooking

Method:
  • Pre-heat pan on medium high heat with 1 tbsp coconut oil
  • Place all ingredients in magic bullet or blender

  • Process until smooth

  • Drop 1 tbsp of batter for each pancake on preheated pan, I fit around 7 pancakes in my pan
  • Cook for 2 minutes or until golden brown, check if browning to quick, reduce heat, if not browning enough increase heat
  • Serve immediately or allow to cool and store in an airtight container
