What Is Kombucha Tea And Where Did It Come From?

The history of Kombucha tea can vary depending on the source but one of the stories I know of is that it originated in China sometime in 220BC. Traditionally brewed at home and passed on from generation to generation. It is known by different names in different cultures and is a healing and nourishing drink made by fermenting some sweetened tea (usually black or green) for 7 to 21 days. The fermentation process creates carbonation making the tea slightly fizzy and tangy with a very small alcohol content. A second fermentation will make the tea really fizzy just like soda and you can flavour it with fresh or dried fruit, herbs & spices (check out some recipes here).

How is Kombucha Tea made?

Kombucha tea is made by brewing black or green tea with sugar then adding some Kombucha Starter tea (already fermented tea) and a SCOBY (which stands for symbiotic colony/culture of bacteria & yeast). The tea and SCOBY are then left to ferment at room temperature for at least 7 days and up to 30 days. Any where between 7-21 days will produce the most pleasant tasting Kombucha, any longer and it can start to taste like vinegar. If you end up with Kombucha vinegar you can use it in salad dressings, dips or even as a hair rinse.
