Fermented Vegetables (Kraut, Pickles, Kim Chi) 

Fermented vegetables also known as lacto-fermented vegetables are a traditional food used by many cultures to preserve vegetables. Using a salt brine that inhibits the growth of bad bacteria (which causes foods to rot) and allowing the good bacteria such as lacto-bacilli (hence the name lacto-fermentation) naturally present in the vegetables to pre-digest and preserve, leaving you with a crunchy, sour, nutrient and probiotic packed superfood you can easily make at home.

Fermented vegetables make a delicious addition to all meals and the sour brine is also great for salad dressings. This is one of the ultimate 'food as medicine' you can make at home. Some of the benefits of fermented foods are (including our personal experience):

Kombucha Tea


This workshop will equip you with everything you need for your first batch of Kombucha Tea including SCOBY (mother), glass jar & tea.  Kombucha tea is a fermented tea originating from China as early as 220 BC. Known for it’s alkalizing health benefits, it is rich in B vitamins, enzymes, probiotics and often used to aid weight loss, improve joints, boost energy, strengthen and heal the gut.

Time: 1.5 hours (includes time at the end for any questions :)

Coconut Water Kefir

Water Kefir is a fermented beverage using sweetened water or coconut water. It is full of probiotics and great for strengthening and restoring the gut especially after antibiotics. It's also very beneficial to consume on a regular basis when you are living in a developing country where our westernised gut microbiome may not be used to.

  1. The workshop was relaxed, informative and fun. It was a totally hands-on experience and a wonderful opportunity to learn, try and understand everything needed about the techniques and possibilities for making this superb fermented tea.

    You will come away from the workshop with the knowledge, enthusiasm, instructions and equipment to make your first batch of Kombucha. You just need to add your own imagination. May was also a great and willing resource afterwards in clearing up those little snippets of information that I had subsequently forgotten.

    I would highly recommend the workshop. Enjoy, learn something new and acquire the skills to make this fascinating and healthy drink all at the same time.

    2. I joined the kombucha workshop and it was very informative and May made it all very easy to follow and not as daunting.
      There were many samples of kombucha flavours to try and really inspired me to think of all sorts of different flavour combinations try.
      Presentation at the workshop was so thoughtful and beautiful.
      We each had our own scoby to take home to start our kombucha family!
      This workshop is awesome if you are curious about the world of Kombucha!

  2. I love the kombucha workshop. Had been seeing May posted about her kombucha lifestyle and very curious about it.
    May gave great presentation on this, the session was pack with knowledge, tips on the glasswares, and hands on making the brew.

    She picked a great venue too. Very intimate and cosy setting, decorated beautifully, as if we are having a tete-a-tete with close friends at home, and drinking delicious fruity kombucha teas that she prepared from home for us.

  4. If you're interested in incorporating fermented foods and drinks like Kombucha into your diet -- which you should be! ;) -- then definitely take May's workshop!

    It was so nice to just get clear instruction and insight into how to do this correctly, instead of muck through all of the different information on the internet. I took the workshop with May over a year (or maybe 2?!) ago, and I still brew Kombucha at home with the scoby that I got from her! It's such a great drink because it's low in sugar, and full of healthy bacteria for our gut, and you can flavor it in endless ways! My fav's are passionfruit, ginger, hibiscus, blueberry-lime.

    May is so sweet and such a great teacher, and she is naturally welcoming and caring. Thanks for spreading the love on this topic, May! xoxo

  5. Attending May’s Kombucha workshop was a milestone of my life.
    I have a crazy lifestyle here in Saigon between works and socializing since moving from Sydney, I have never pay attention to my diet until I attended this workshop. May’s is a gift human being – her knowledge and senses of natural healing is respectful, her passion to share kind knowledge to others, I feel her positive energy everytime I come to her with the confusions of how my body is experiencing after the birth of my 2nd child. The underlying value of May’s class is it has changed my mindset about natural food treatment can mend your gut and equip your body from bad bacteria.
    Who would have thought that English Kombucha workshop could also be available in Vietnam  Thank you beautiful!!!
